Butcher Brian’s Sticky Ribs

If you’re looking to take your dinner game to the next level, Brian’s Asian-inspired sticky ribs are sure to hit the spot. Made with Hickory Nut Gap’s St. Louis Style Ribs, this recipe brings together savory and sweet flavors in a sticky glaze that will leave you craving more. Let’s dive into the ingredients and instructions for creating this mouthwatering dish!

Ingredients:

  • 1 Rack of Hickory Nut Gap St. Louis Style Ribs (cut into individual ribs)
  • 2 tbsp Brown Sugar
  • 1 tbsp Kosher Salt
  • 1 tbsp plus 1 tsp Chinese Five Spice (homemade recipe below)
  • ¼ cup Hoisin Sauce
  • ¼ cup Soy Sauce
  • ¼ cup Water
  • 2 tbsp Honey
  • 1 Piece of Ginger (2” grated)
  • 3 Cloves of Garlic (grated)
  • 3 Green Onions
  • 3 tbsp Canola Oil
  • 1.5 cups Water

Chinese Five Spice (makes about ¼ cup):

  • 1 tsp Cinnamon Powder
  • 1.5 tsp Fennel Seeds (ground)
  • 5 Whole Star Anise (ground)
  • 1 tbsp Sichuan Peppercorns (ground)
  • 1 tsp Cloves (ground)

LET’S GET COOKING!

Prepare the Sauce

  1. In a small saucepan, whisk together hoisin sauce, soy sauce, ¼ cup water, honey, and 1 tsp of the Chinese five spice.
  2. Add grated ginger, green onion, and garlic.
  3. Simmer for about 5 minutes.
  4. Set aside until ribs are cooked.

Season and Brown the Ribs

  1. Cut ribs individually.
  2. Season ribs all over with salt and 1 tbsp of the Chinese 5 spice.
  3. Preheat a pan with canola oil and add ribs.
  4. Turn them occasionally for even browning.
  5. Cook ribs until they are nicely browned all over.

Slow Cook the Ribs

  1. Add 1.5 cups of water to the ribs and cover.
  2. Reduce heat to low and cook until ribs are tender, approximately 1.5 hours.
  3. Check the liquid occasionally and add more if necessary.

Glaze the Ribs

  1. Once ribs are tender, remove the lid and add the sauce.
  2. Continue to cook the ribs with the lid off, tossing them to coat evenly.
  3. Cook until the sauce reduces and tightens up, creating a sticky glaze on the ribs.

Serve and Enjoy!

  1. Serve the ribs immediately,
  2. Top with sliced scallions for a fresh burst of flavor.
