SHIPPING SCHEDULES

  • We ship orders on Mondays and Tuesdays to avoid perishable items being delayed over the weekend.
  • Most shipments arrive within 1–3 days of fulfillment.
  • You’ll receive an email confirmation with tracking information once your order ships.

TRANSIT TIMES

  • Because our products are frozen and perishable, we only allow packages to be in transit for up to 3 consecutive business days. Orders ship from Flat Rock, NC, and depending on your location, will be sent via Overnight, 2-Day, or 3-Day Ground service. 
  • Orders outside our ground network must be upgraded to express shipping to ensure safe arrival. 
  • Hickory Nut Gap ships only within the contiguous U.S. 
  • We are unable to ship to P.O. Boxes. Please verify your shipping address carefully at checkout. 

SHIPPING PROVIDERS

  • We partner with UPS, FedEx, and USPS, selecting the most cost-effective option for each order.

FULFILLMENT TIMES

  • Orders are shipped within 5–7 business days of purchase. Shipping days are limited to Monday and Tuesday to help ensure safe delivery.

OUT OF STOCK ITEMS

  • Hickory Nut Gap practices whole animal utilization. There are times when the availability of certain items may vary. 


PACKAGING & FRESHNESS

  • Each order is shipped in an insulated cooler with dry ice to ensure items remain frozen. 
  • Products may arrive partially thawed, especially in warm weather. As long as they are still cold to the touch, they are safe to refreeze for up to 6 months.
  • Please transfer items to the freezer or refrigerator immediately upon delivery, consume within 6 months. 
  • If any item arrives warm to the touch, please discard it and contact us. 

DRY ICE

  • To dispose of dry ice, place it in a well-ventilated area at room temperature. It will sublimate on its own. Do not place dry ice in trash bins or drains.

Recyclable Shipping Coolers 

  • Our shipping boxes are made from 100% post consumer recycled cardboard, and are recyclable with everyday cardboard recycling.

VISITING THE HOME FARM

WHAT DO YOU DO AT HICKORY NUT GAP FARM?

Hickory Nut Gap’s mission is to build community through agriculture. As part of that mission, our family farm is a working farm that promotes regenerative agriculture. We raise cattle, hogs, chickens, and turkeys. At our farm store, we sell our meats along with local grocery and craft items.

  • We welcome visitors to the farm anytime, and our farm store is open Wednesday–Sunday from 10 a.m. to 6 p.m.
  • Throughout the year, we host a variety of events, including barn dances, makers markets, yoga, regenerative hub trainings, and more.
  • Twice a year, we hold warehouse sales at the home farm. These events are very popular and provide a great opportunity to stock up on Hickory Nut Gap products.

CAN WE SEE ANIMALS WHEN WE VISIT?

  • There is an animal viewing area and a baby chick brooder at our farm in Fairview adjacent to the Big Barn.
  • At different times of the year, you can find baby chicks, baby turkeys, piglets, goats, and calves in these areas.
  • Our cow pastures and pig fields outside of the barnyard area are not open to visitors unless you are participating in a guided tour.
  • The farm store is open to the public Wednesday-Sunday from 10am-6pm.

CAN I HOST AN EVENT AT THE FARM?

  • Yes, you can rent The Party or Big Barn for you next Birthday party or Event.

HOW DOES THE LOCAL CSA PROGRAM WORK?

  • CSA stands for “Community Supported Agriculture” and is a business model used by many community farms to build the direct relationship between farmers and customers.
  • Become a member of our CSA and we will prepare a monthly package of beef, pork, and chicken products for you. The perks include 10% off retail pricing for your share.
  • CSA members have early access to Thanksgiving turkeys, tickets to special events, and more. We also do regular giveaways to our CSA members as a thank you for their continued support.

WHY DOES THE PRODUCT PACKAGING LOOK DIFFERENT ON THE WEBSITE?

WHERE DOES HICKORY NUT GAP MEAT COME FROM?

Hickory Nut Gap works with regional cattle and hog farmers to bring their 100% grassfed beef and pasture raised pork to market. We are proud of our farmer relationships and the supply chain that we've built. Hickory Nut Gap Farm is part of this supply chain, as well as animals that Hickory Nut Gap owns on leased land across North Carolina. We raise cattle, hogs, chickens, and turkeys at the farm in Fairview.

All of the farms we work with use our farming protocols.

Among other requirements, all cattle are 100% grassfed and grass finished and hogs are pasture raised. We do not allow antibiotics or added hormones in our supply chain.

Our farm partners are primarily located in NC, SC, TN, GA, VA, and KY.

What is the difference between 100% Grassfed and Grassfed? 

Hickory Nut Gap's 100% Grassfed Beef comes from livestock that begin their lives nursing and grazing. After weaning, our cattle remain on pasture, eating grass, hay, or baleage, depending on the season.

“Grassfed” is a general term that can also include animals that are grassfed and then grain-finished. That’s why it’s important to understand the standards a company follows in order to make an informed food choice.

You can feel confident that Hickory Nut Gap beef is 100% grassfed and 100% grass finished.

IS YOUR BEEF ORGANIC?

While our beef is 100% grassfed and grass finished, we do not hold an organic certification. Many of the standards that we practice mirror or go beyond organic protocols. You can read more about our standards by visiting this page.

What do your pigs eat throughout the year?

Our pigs are pasture raised and eat a free choice grain diet. They enjoy what they root and forage on their own in the environment in which they are raised which can include acorns and tubers.

DO YOU USE MRNA VACCINES ON YOUR ANIMALS?

Short Answer: No, there are no MRNA vaccines in use or that would be applicable for our pastured operations for any species and we don't foresee their use in the future. 

Long Answer: For other routine vaccines, Hickory Nut Gap does not mandate a vaccination protocol for our grass-fed beef or pastured pork supply chain, but we (and GAP) do mandate that medical records of vaccines must be kept by the farmer. Vaccination plans are generally made with each herd's veterinarian as they can be region specific.

  • Generally, it is recommended to administer beef cattle two classes of vaccine: a respiratory illness vaccine and a clostridial (soil-born illness) vaccine. For example, on our home farm in Fairview our animals receive Calvary 9 and Covexin 8, or a suitable substitute as recommended by our veterinarian.
  • Our sows receive an annual vaccine called Farrowsure Gold to prevent against soil born and respiratory disease that cause miscarriage and still birth. Their piglets are not vaccinated as they receive immunity through the sow's milk. All of these vaccine products use a traditional killed/modified virus in non-active carrier solution.   
  • Our meat poultry do not receive any vaccines. They do receive Corid (amprolium), a coccidiostat, to prevent death by diarrhea when they are two weeks old.
  • Our layer hens are vaccinated for Marek's disease (a disease carried by wild birds) at one day old.

WHERE IS HICKORY NUT GAP'S MEAT PROCESSED

All Hickory Nut Gap beef is currently processed at Marksbury Farm in Lancaster, Kentucky. Our pork is processed by Leidy’s in Pennsylvania, and our salamis are crafted by Tempesta in Chicago, Illinois. Fisher Meats in Indiana produces our meat sticks and hot dogs. Poultry is processed on-site at our farm in Fairview.

For our farm store, we bring back whole hogs from the processor and custom-cut them in-house in our butchery. Chicken and Turkey are also butchered in-house, and some beef is cut here as well, using primals sourced through our wholesale division.

 

CAN I BUY A HALF HOG OR QUARTER COW?

Yes, WNC locals are able to purchase half hogs and quarter cows through our Farm Store website. These items are only available for local pickup at the Farm Store in Fairview, NC.

ARE YOUR PRODUCTS GLUTEN FREE?

All Hickory Nut Gap retail products are gluten free.

*Sometimes our Farm Store produces products that contain gluten, sold only at the Farm Store in Fairvew, NC. Please check with the butchery team at the counter to confirm at the time of purchase.

ARE YOUR PRODUCTS NON-GMO?

While we are non-GMO certified by affidavit, we do not hold a third-party certification. Our feed for pigs on our home farm includes non-GMO soybean meal and non-GMO corn. However, it's important to note that some of our growers may use herbicides for field preparation in their no-till planting methods, and occasionally apply fungicides or pesticides during storage at grain elevators.

Regarding glyphosate, we cannot guarantee that our pork is completely free of glyphosate residues. Factors such as field preparation methods, proximity to conventional farms, and shared equipment with conventional farmers may contribute to trace residues. For those seeking products completely free of glyphosate, we recommend considering certified organic producers, who have stringent protocols in place to minimize such exposures.

LAND & ENVIRONMENT

How is raising cows good for the environment?

Great question — cattle do produce methane, a potent greenhouse gas. But that’s only part of the story. How cattle are raised makes a huge difference in whether they harm or help the environment.

Cattle raised in regenerative systems can become powerful tools for restoring ecosystems instead of degrading them. Here’s how:

How do I become a wholesale customer?

To qualify as a wholesale customer, you must be a registered business with an EIN number and supply us with your E-595 form.  We cannot sell wholesale products to individuals/ retail customers.
